Ingredients:
- 4-6 chicken thighs (bone-in, skin-on)
- 1 tablespoon vegetable oil

For the Jerk Marinade:
- 4-5 green onions, chopped
- 1 small onion, chopped
- 2-3 garlic cloves
- 1-2 Scotch bonnet peppers (adjust to taste; they are very hot!)
- 1 tablespoon fresh ginger, chopped
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- 1 tablespoon brown sugar
- 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
- 1 teaspoon ground allspice
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/2 teaspoon ground cloves
- Juice of 1 lime
- Salt and pepper to taste
Instructions:
Prepare the Marinade:
- Combine all the marinade ingredients in a blender or food processor. Blend until smooth. Adjust the seasoning with salt and pepper.
Marinate the Chicken:
- Place the chicken thighs in a large bowl or ziplock bag. Pour the marinade over the chicken, making sure each piece is well-coated.
- Let the chicken marinate in the refrigerator for at least 2 hours, preferably overnight. This allows the flavors to penetrate the meat.
Preheat the Oven:
- Preheat your oven to 400°F (200°C).
Bake the Chicken:
- Remove the chicken from the marinade, letting any excess drip off (you can also scrape off excess marinade). Place the chicken thighs on a baking sheet lined with parchment paper or aluminium foil.
- Drizzle a bit of vegetable oil over the chicken thighs to help them crisp up.
- Bake in the preheated oven for 35-45 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) and the skin is crispy and caramelized.
Rest and Serve:
- Remove the chicken from the oven and let it rest for a few minutes before serving.
- Garnish with fresh herbs if desired and serve with your favourite sides, like rice and peas or a fresh salad.
